I had a couple bananas lying on the counter that were screaming out to be made into a scrumptious banana bread. I got out my trusty Fannie Farmer Cookbook and with a couple of modifications made this yummy banana nut bread. Yummy!! Here is the recipe I used:
3 ripe bananas, well mashed (I only had 2 so I added a half cup of applesauce)
2 eggs, well beaten
2 cups flour (I used whole wheat)
3/4 sugar
1 tsp salt
1 tsp baking soda
1/2 cup chopped walnuts (I used pecans and saved a few to sprinkle on top)
Bake at 350 degrees for 1 hour. Enjoy!!

That looks and sounds so good! I'm trying to stay away from sweets to fit nicely into my Ky Oaks dress, but fruit is healthy, right? :)
That's how I justify it to myself...the bananas and whole wheat flour make it healthy :)
